With over 25 years of experience in the United States and UK as an operator of high profile and successful restaurants, Chef Melling brings artistry, poise, and incredible skill to Picayune's French Bistro Popup. He has worked at three-starred Michelin restaurants, The French Laundry and Per Se. Most recently he was the Director of Culinary Dining, Development & Operations for world renowned Chef Thomas Keller. Chef Ross oversaw Bouchon Bistro & Bakery in Yountville & Las Vegas, Ad Hoc, La Calenda, Regiis Ova Champagne & Caviar Lounge, and The Surf Club Restaurant in Miami. With a background enriched by prestigious events like Vanity Fair parties, the Tribeca Film Festival, and world-class sporting events, Chef Ross brings a wealth of expertise to the table. 

A member of the local community of Napa for over a decade, Chef Ross understands what makes Napa Valley great and celebrates that in his cooking. He resides in Napa with his wife Emerlee, and daughter Daly.
