20 day fermentation in median sized fermenters. All wine was aged in 60 gallon French barrels for 18 months; 20% New French Oak. Wines were racked every 4 months and assemble a month before bottling.

Tasting Notes
Garnet in color, this fragrant cabernet sauvignon exudes ripe blackberries, bing cherries with hints of black tea. The palate is juicy, packed with fresh berries, dark chocolate and layers of cappuccino and graphite. Elegant and bold the wine is balanced with firm yet elegant tannins. The finish is long and focus with lingering notes of violet.
